Product application:
The PGPR is emulsifier and stabilizer. It is a W/O emulsifier, the lipophilic group is polymerization of castor oil; the hydrophilic group is polyglycerol moiety; Thus it dissolve oil nicely, can effectively influence and construct the fluidity of chocolate; Has good synergy effect when combine with lecithin, which gives the PGPR a good thermal stability – very limited color changed for keeping under 90℃ in 14 days, hence decrease the stickiness from chocolate sauce, turndown the amount of cocoa butter used in production, reduce the thickness of chocolate coating and make the manufacture process easier.
